Second Psycho
In an old version of the game, you had to beat a second Psycho Slime flawlessly as you mentioned (it started with 5 points). Now, you play against a different opponent, the Big Blue Boss. The game on the front page of this website is the current version.

How to beat the first two slimes
This seems to work best as an Ace serve:
Obviously the other person doesn't hit it, but I only have one hand :|How to beat the Psycho
Against the Psycho, here's an Ace serve. Note: he doesn't return it.
Again, though, this is on the old version, so I'm unsure of whether it would work...Highest Psycho Slime score?
I lost to Psycho slime, but still made the high score list, knocking off somebody that had completed the game!
